Zamorano
This hard sheep's milk cheese is noticeably nuttier and
richer than its Spanish cousin Manchego. The nomadic
shepherding families of Castille-Leon have been
handcrafting Zamorano for centuries. Zamorano has a
sharp, moderately gamey, sheep's milk-flavored bite and
texture.
Clochette Chevre
This bell-shaped goat cheese is from the Poitou region
of France. This cheese is aged for about one month and
produces a thin skin and golden crust, strong and herbal
flavored.
Flixer
Made by Mario Contin in Eastern Switzerland, Flixer is
one of the rarest cheeses produced anywhere. It is made
from May-October from a herd of 12 Lacaune sheep, and
the cheese is aged for about four months.
Fromagerie Tournevent le Biquet
This cheese is a soft, fresh, pasteurized goat's milk
cheese from Quebec Canada. This smooth goat cheese has a
slightly acidulous taste and a wonderful richness.
Laura Chenel Cabecou
Made with 100% cultured, pasteurized goat's milk, these
rich and creamy chevre disks swim in a sea of extra
virgin olive oil, bay leaves, and other herbs and
spices.
